What is Madeira wine?
Madeira is a fortified wine from the Portuguese island of the same name, a protected designation of origin. Fermentation is stopped with neutral wine spirit at 96%, giving 17 to 22% alcohol, and the main white grapes set the sweetness: Sercial (dry), Verdelho (medium dry), Boal (medium sweet) and Malvasia (sweet), with Tinta Negra the leading red. It is known for its acidity and a longevity that can exceed two centuries.
What are estufagem and canteiro?
They are Madeira’s two legal ways of ageing. In estufagem the wine is heated by hot-water coils or jackets to no more than 50°C for at least three months; in canteiro it ages in cask at room temperature, around 21°C on average, often in warm lofts, for years. Both oxidise and concentrate the wine, turning fruit aromas into jam, candied fruit, nuts and spice.
How big is a Madeira cask, and what is it made of?
Madeira’s lodge casks, the “pipas canteiras”, average about 650 litres, and Madeira casks sold to whisky makers (often called drums) are typically quoted at about 600 to 650 litres. Most are American oak, with a minority of French and Portuguese oak and some chestnut, and some are centuries old.
What does a Madeira cask do to whisky?
Madeira casks typically add notes of caramelised sugar, dried fruit and nuttiness. They are often used for finishing; Glenmorangie’s Madeira finish is a well-known example.
