Oloroso cask whisky

Oloroso is a dry Spanish sherry, aged in contact with air, and casks that held it are among the most common sherry casks in whisky. This page lists whiskies matured or finished in oloroso casks, with the best current UK price for each.

The bottles span Scotch (Tamdhu 15 Year Old, Jura 12 Year Old), Irish whiskey (Redbreast Lustau, Bushmills Black Bush) and beyond. “Oloroso” on a label names the cask, not how long the whisky spent in it: some are matured in oloroso from the start, others only finished. We tag the cask only when the label or a retailer’s description names it, so a sherried whisky that does not name the sherry sits on our sherry cask page.

For how these casks are made, see Whiskipedia on oloroso sherry casks. Prices are the best current in-stock offer from the UK retailers we check (how we compare prices).

What is the oldest oloroso cask whisky you can buy?
What is an oloroso cask?
An oloroso cask is one seasoned with oloroso, a dry Sherry made from Palomino grapes. After fermentation the wine is fortified to 17%, which stops the veil of flor yeast from forming, so it ages slowly in contact with oxygen through the criaderas and solera. The result is an amber to mahogany wine of 17 to 22% with walnut, tobacco, spice and leather notes, and it is the Sherry most used to season casks for whisky.
What does an oloroso cask do to whisky?
Whisky from oloroso casks typically shows dried fruit such as figs, plums and raisins with spicy oak, and a dry but soft, full mouthfeel. The strength of the effect depends on how long the whisky spends in the cask and whether it is a first fill or a refill. Oloroso casks are used both for full maturation and for finishing whisky first aged in ex-bourbon casks.
What is the difference between oloroso and PX whisky?
Oloroso is a dry Sherry from Palomino grapes, fortified after a full fermentation, while Pedro Ximénez (PX) is made from sun-dried PX grapes whose fermentation is stopped early, leaving more than 212 grams of sugar per litre. In whisky, oloroso casks give dried fruit, spice and a dry, full texture; PX casks give a sweeter, creamier style with raisins, dates, figs, chocolate and coffee. Because PX can dominate, it is more often used as a finish than for a whisky’s whole maturation.
Is oloroso cask whisky sweet?
Oloroso itself is a dry sherry, and casks that held it tend to add dried fruit, nuts and spice rather than outright sweetness, along with a darker colour. If you want a sweeter sherry influence, look for Pedro Ximénez, mostly used for finishing; see PX cask whisky.
