Pedro Ximénez cask whisky

Pedro Ximénez is a very sweet sherry made from sun-dried grapes, and even a short stay in a cask that held it leaves a mark, which is why most PX whiskies are finishes rather than fully matured in PX. This page lists every bottle we track whose name or description mentions Pedro Ximénez, PX for short.

The tag covers Scotch, American and Indian whisky. Some bottles, such as Ardbeg An Oa, marry PX with other cask types, so a PX influence does not mean PX alone. For the drier end of sherry maturation, see oloroso casks and the wider sherry cask page. Prices are the best current in-stock offer from the UK retailers we check.

What is the difference between oloroso and PX whisky?
Oloroso is a dry Sherry from Palomino grapes, fortified after a full fermentation, while Pedro Ximénez (PX) is made from sun-dried PX grapes whose fermentation is stopped early, leaving more than 212 grams of sugar per litre. In whisky, oloroso casks give dried fruit, spice and a dry, full texture; PX casks give a sweeter, creamier style with raisins, dates, figs, chocolate and coffee. Because PX can dominate, it is more often used as a finish than for a whisky’s whole maturation.
What is Pedro Ximénez sherry?
Pedro Ximénez is a naturally sweet Sherry made from the grape of the same name. The grapes are laid out on esparto mats in the sun (the “asoleo”) until they turn to raisins, and the concentrated must is fortified with wine spirit to stop fermentation. It ages only oxidatively, and the Consejo Regulador puts its sugar above 212 grams per litre at 15 to 22% alcohol, with raisin, fig, date, coffee, dark chocolate and liquorice notes.
What does a PX cask do to whisky?
A PX cask gives whisky intense sweetness and dried fruit, typically raisins, apricots, dates and figs, with a full, soft and creamy mouthfeel and dark chocolate or espresso notes. Because the flavour can quickly overwhelm a single malt, PX casks are usually used to finish a whisky first matured in ex-bourbon casks, and full maturation in PX is rare.
Are PX whiskies fully matured in PX casks?
Rarely. PX is sweet enough that a little goes a long way, so most producers use it as a finish or as one part of a vatting: Ardbeg An Oa, for example, combines PX with other cask types. Where a bottle is fully PX-matured the label normally makes a point of it.
