Which casks can Scotch whisky be matured or finished in?
Scotch must mature in oak casks holding no more than 700 litres. Permitted casks include new oak and casks that previously held wine (still or fortified), beer, or spirits, excluding casks from stone-fruit spirits or drinks with fruit, flavouring, or sweeteners added after fermentation or distillation. All casks must be drained empty before filling, and the whisky must retain the traditional colour, taste, and aroma of Scotch.
Can Scotch be matured in spiced rum casks?
Generally not. Casks that previously held spirits with fruit, flavouring, or sweetening added after distillation are excluded, which rules out typical spiced or flavoured rums. The cask must also come from a rum whose own cask ageing is a traditional part of its production process.
What does a rum cask do to whisky?
Rum casks typically add extra caramel sweetness and creamy vanilla, and some drinkers find molasses, banana and coconut. Some rum casks are puncheons, which are typically smaller than sherry puncheons.
Why are rum casks used for Scotch?
Scotland had too little oak to build its own casks, and casks that had carried sherry, wine and rum to British ports were cheap and plentiful, so distillers reused them. The Scotch Whisky Association’s research found long-standing traditional use of rum casks, and they remain allowed today.
