Midlands whisky

The Midlands has emerged as one of England’s most dynamic distilling heartlands, bridging the rolling hills of the Cotswolds with the industrial heritage and woodlands of Derbyshire and Shropshire.

Producers here include Cotswolds in Stourton, which uses locally farmed grain matured in shaved, toasted and re-charred (STR) red wine barriques, White Peak in the Derbyshire Derwent Valley, makers of the Wire Works single malt crafted with brewery yeast and lightly peated barley, and Henstone in Shropshire.

White Peak, in a former wire works at Ambergate, Derbyshire, ferments with fresh brewer’s yeast collected each week from a Peak District brewery. See Whiskipedia on Cotswolds and on White Peak.
