Tennessee whisky

Tennessee whiskey is American whiskey made in Tennessee much like bourbon, from a corn-led mash aged in new charred oak, with one extra step: the spirit is filtered through maple charcoal before ageing, known as the Lincoln County Process.

Almost everything on this page is Jack Daniel’s, from Old No. 7 to the Bonded, Triple Mash and Single Barrel Select bottlings and the Tennessee Rye. The same bottle often sells at noticeably different prices across the shops we check, so it pays to compare. For the charcoal step and the sour mash process, see Whiskipedia on charcoal mellowing and sour mash. Prices are the best current in-stock offer from the UK retailers we check (how we compare prices).

What is the oldest Tennessee whisky you can buy?
What are the legal rules for Tennessee whiskey?
Tennessee Code 57-2-106, passed in 2013, says Tennessee whiskey must be made in Tennessee from at least 51% corn, distilled at no more than 160 proof, filtered through maple charcoal before ageing, put into new charred oak barrels at no more than 125 proof, aged in Tennessee and bottled at 80 proof (40% ABV) or more. A narrow exemption from the charcoal step covers one distillery, Prichard’s.
What is the Lincoln County Process?
It is the filtering of new spirit through sugar maple charcoal before it goes into the barrel. The charcoal absorbs some fusel oils, esters and sulphur compounds, giving a softer, lighter spirit. Jack Daniel’s trickles the spirit through about 3 metres of charcoal, while George Dickel chills it first and soaks it.
Who makes Tennessee whiskey?
The best-known makers are Jack Daniel’s and George Dickel, whose Cascade Hollow distillery near Tullahoma uses a mash of 84% corn, 8% rye and 8% malted barley. Dickel spells it “whisky”, without the e, reputedly because George Dickel believed his whisky could rival Scotch.
Is Jack Daniel's a bourbon?
Jack Daniel’s is sold as Tennessee whiskey, and that is what the label says. It is made much like bourbon, from a mostly corn mash aged in new charred oak, but the spirit is filtered through maple charcoal before ageing, the step that defines the Tennessee style. See Whiskipedia on charcoal mellowing.
