Unpeated whisky

Most Scotch is unpeated: the malt is dried without peat smoke, so the whisky keeps no smoky flavour from the malting. The bottles below come from distilleries whose usual style is unpeated, such as Glenfiddich, Glenlivet, Glenmorangie, Aberlour and Balvenie, alongside unpeated releases from places better known for peat.

That includes Islay: Bunnahabhain’s core range and Bruichladdich’s own-name single malts are usually unpeated. One honest caveat: for almost every bottle here the peat level is inferred from the distillery’s house style rather than stated on the label, so a special release could differ, and smoke-like notes can also come from casks. Check the bottle page if it matters. For the opposite list, see peated whisky.

What is the oldest unpeated whisky you can buy?
Does peaty water make whisky smoky?
No. Peaty water carries minerals, not the phenols that come from burning peat, so it adds no smoke. Its lower pH may help fermentation.
Can a whisky taste smoky without being peated?
Yes. Charring an oak barrel creates phenolic compounds similar to peat smoke, so smoky or medicinal notes can appear in unpeated whisky. A finish in a cask that previously held peated whisky can also add smoke.
How is malt for unpeated whisky dried?
With hot air from a non-peat fuel, passed through heat exchangers, so no peat smoke reaches the barley. Peat was historically used mainly where there was no wood or coal to burn.
Is all Islay whisky peated?
No. Bunnahabhain’s standard range is unpeated, unlike most of its neighbours. Around two-thirds of its production is still unpeated malt, though it also makes peated spirit at 35 to 45 ppm.
