What is the oldest Tennessee whiskey you can buy?
What does sour mash mean on a bourbon label?
Part of the spent, acidic mash from the previous distillation is added to the new mash. This lowers the pH to around 5.4 to 5.8, which holds back bacteria and feeds the yeast. Most bourbon and Tennessee whiskey distillers use it, but it is not a legal requirement.
What is Tennessee whiskey?
A whiskey made in Tennessee to bourbon-style rules (at least 51% corn and charred new oak barrels) that must also be filtered through maple charcoal before ageing, a step known as the Lincoln County Process. Tennessee law has required this since 2013, with a single exception for Benjamin Prichard’s.
What is the Lincoln County Process?
New-make spirit is filtered through, or steeped in, a deep bed of sugar maple charcoal before it goes into the barrel. Jack Daniel’s trickles it through vats about 10 feet (3 metres) deep, while George Dickel chills the spirit first and floods its vats. It is named after Lincoln County, where Jack Daniel’s first operated; a boundary change in 1871 put the distillery in Moore County.
Is Tennessee whiskey a bourbon?
Its requirements are almost the same, and most Tennessee whiskeys meet the bourbon criteria; trade agreements such as NAFTA defined it as a straight bourbon that may only be made in Tennessee. Most producers, including Jack Daniel’s, still don’t call their whiskey bourbon.
What does charcoal mellowing do to the spirit?
It removes some of the harsher compounds, such as fusel oils and sulphur compounds, so the spirit going into the barrel is lighter and smoother. One study found it removed about a third of the branched alcohols and almost half of the ethyl esters, which also takes away some fruitiness, and the process costs about 1% ABV.
